Food (I love you), Vegan Style

This past weekend I cooked dinner for a couple of good friends who happen to be vegan. Despite the fact that I house several vegan cookbooks in my stash of recipe collections, including The Real Food Daily Cookbook and How it all Vegan!, I wanted some fresh inspiration.

And as I’ve been doing quite often lately, I turned to Foodily (food, i love you – cute, right?). Have you heard of it? Simply put, it’s a recipe searching and sharing site (imagine if Pinterest met Epicurious). I typed in the word “vegan” and after browsing through many scrumptious sounding results I narrowed it down and decided on my menu: Black Bean and Sweet Potato Tacos  for the main course and Coconut Pineapple Vegan Banana Bread for dessert.

YUM. Both recipes were winners, as evidenced by the fact that both the vegans and non-vegans at the table were equally satisfied. The healthfully satisfying Black Bean Sweet Potato Tacos are destined to become a weeknight staple. In fact, the leftovers are sounding pretty good right about now, maybe topped with a fried egg???
