Made this for my family this past weekend, using kumquats from the backyard. Not unlike the loquat, kumquats are one of those fruits that people aren’t quite sure what to do with. This fresh and summery cocktail solves that problem rather quickly.
6 ounces gin
Rinse and quarter a handful of kumquats (remove seeds!).
Muddle with a tablespoon of agave nectar and the juice of half a lemon.
Shake this orangey mixture with a good pour of gin (depending on how many servings), more lemon juice and a handful of ice.
Strain into martini glasses, spoon in the muddled kumquats and and top with a lemon slice. Enjoy all summer long.
