The Breakfast Sandwich
Morning is my favorite time of day and with that comes my favorite meal – breakfast. When I’m not prepping my all-time-fave Date Shake I’m usually doing something that involves an egg or two. Right now, I’m on a serious Breakfast Sandwich kick. The base is usually the same – a multi-grain english muffin, but the toppings are always changing. Eggs – I like ‘em poached or cooked up into a soft, thin omelet (one egg is perfect). Sometimes I’ll melt a little goat cheese in the there. I’m loving frying up a piece of canadian bacon and layering it with arugula, smashed avocado and a juicy slice of heirloom tomato. A little squeeze of lemon, dash of tabasco and a sprinkling of salt and pepper and I’m in heaven.
