Pancake Breakfast

In the midst of last Sunday’s vegan feast, my friend Tevia (the evening’s guest of honor) mentioned that on most mornings she makes vegan pancakes for her little boy (often in the shape of bugs). Tev is an incredible baker so I knew I wanted to get my hands on that recipe. Thankfully, she agreed to share and I’ve been feasting on these all weekend. So good served with maple syrup and nectarine jam.

Tevia’s Vegan Pacakes

1 1/4 cups unbleached flour
2 teaspoons baking powder
1 teaspoon vanilla
1 teaspoon cinnamon
1/3 cup water
1 cup almond milk
2 tablespoons canola oil
2 tablespoons maple syrup

Combine the above ingredients (be careful not to overmix). Heat a large skillet or frying pan over medium and grease with coconut or canola oil. Once heated, spoon batter onto the pan and let cook for about two minutes per side, until lightly browned. Enjoy with side of bacon. Just kidding.
