I went to an amazing cooking class this morning taught by the spunky Jenny Goldberg of Spork Foods in Silver Lake. It was all vegan brunch fare and the menu was diverse and delicious and I loved watching Jenny cook everything in just over an hour. When we arrived, Jenny offered us Mimosas, tea or coffee – such a nice way to spend a Sunday. Here’s what we made:

Blueberry pancakes with candied pecans
Broccoli and cheese tofu quiche with smokey tempeh bacon
Sweet potato and pepper hash
Spiced banana hazelnut muffins with preserves
