Raw Fudge
Have you ever eaten raw fudge? My friend’s mother made this for a dinner I hosted last week and I have been craving it ever since. It tastes different than the cooked fudge that most of us are used to but I think it’s just as good. Loved eating this alongside a bowl of strawberries. Thanks for the recipe, Yoshi!
Carob Fudge

1 cup raw carob powder
1/2 cup soaked almonds (soak overnight & chop)
1/2 cup coconut oil
1/2 teaspoon vanilla extract
2 dried apricots
Blend in food processor. Spread batter 1/2″thick and refrigerate until coconut butter sets the batter into a fudge like consistency. Cut into bars.
